Green Bean Chickpea & Herb Salad

Green Bean Chickpea & Herb Salad


  • 150g Green Beans
  • 1/2 Red Onion, diced
  • 1 can Chickpeas, rinsed
  • Fresh Parsley
  • Fresh Coriander
  • Olive Oil
  • Balsamic Vinegar
  • 1 clove Garlic, chopped
  • Salt


1. Boil Green Beans, stems removed, in salted water for 3 minutes, so they still have some crunch.  Dice 1/2 a Red Onion and add to bowl. Drain and rinse one can of Chickpeas and add with a handful of rough chopped parsley and coriander.

2. Heat 1 tbsp Olive Oil with chopped garlic and when hot, add green beans to oil and fry a a few minutes.

3. Toss salad and dress with a splash of Olive Oil and Balsamic Vinegar and season with salt and pepper.  Add warm green beans and serve.
