Summer Peach and Blackberry Flatbread

Ingredients
- 1 piece Stonefire Original Naan Bread
- 1/2 cup of Ricotta Cheese
- 1 Red Haven peach, peeled and sliced
- 1 handful of Blackberries
- Nonna Pia’s Balsamic Reduction
- 2 teaspoons of fresh Basil, chopped
- Salt and Pepper
Directions
- Start with Preheating oven to 425F. In a clean cast iron pan or a baking sheet, place your Naan Bread
- Spread ricotta cheese evenly around the flatbread, avoiding the sides
- Then add peach slices and blackberries on top of the ricotta spread.
- Bake for about 12 minutes
- Cool for about 2 mins, then sprinkle Salt, Pepper and chopped Basil
- Drizzle with Balsamic Reduction
Note: We used Nonna Pia’s Cabernet Merlot Balsamic Reduction
Tips
- Blanche peaches to make them easier to peel. Boil Water. Score an “X” on bottom peach and boil for 30 seconds. Cool peach in cold water.
- For this recipe, we are using BC Grown Red Haven Peaches as they are very juicy and sweet! These peaches will enhance the flavour of the smooth and creamy ricotta cheese
