This Mediterranean Lemon Dill Chicken is a MUST try!
Ingredients: • 4 boneless, skinless chicken breasts • 1/2 cup extra virgin olive oil • 1/4 cup white wine vinegar • Zest and juice of 1 lemon (approximately 2 tablespoons juice) • 3 cloves garlic, finely minced • 2 tablespoons to 1/4 cup fresh dill, finely chopped (adjust to taste) • 1 teaspoon dried oregano • 1/2 teaspoon Red Barn’s Own Steak Spice • Salt and pepper, to taste
Instructions:
1. Marinate the Chicken: In a large mixing bowl or resealable bag, whisk together the olive oil, white wine vinegar, lemon zest and juice, garlic, dill, oregano, steak spice, salt, and pepper. Add the chicken breasts and toss to coat evenly. Cover and marinate in the refrigerator for at least 4 hours, or up to overnight.
2. To Grill: ◦ Preheat grill to medium-high heat (about 400°F / 200°C). ◦ Remove chicken from the marinade and shake off excess. ◦ Grill chicken for 6–7 minutes per side, or until nicely charred and the internal temperature reaches 165°F (74°C). ◦ Let rest for 5 minutes before slicing. Recommend serving with Greek salad, Eugenes pitas, and Eugenes tzatziki.
