Perfectly roasted Herb Butter Chicken

Ingredients:
- 1/2 cup butter, softened
- 2 tbsp extra virgin olive oil
- 4 cloves garlic, minced
- 3-4 sprigs fresh rosemary, finely chopped
- 1 tsp paprika
- 1 tsp Red Barn’s 7 Steak Spice
- Salt and pepper, to taste
Instructions:
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the softened butter, olive oil, minced garlic, chopped rosemary, paprika, steak spice, salt, and pepper. Stir until the mixture is well combined.
- Pat the chicken dry. Carefully loosen the skin from the chicken’s breast and thighs.
- Generously rub the prepared herb-butter mixture all over the chicken including under the skin and inside the cavity of the chicken.
- Place the chicken breast side up in a roasting pan.
- Roast the chicken for 50 to 60 minutes, or until the internal temperature reaches 165°F when measured at the thickest part of the chicken.
- Remove the chicken from the oven and let it rest before serving.
