Herb Butter Whole Fryer Chicken
Ingredients:
• 1/2 cup butter, softened
• 2 tbsp extra virgin olive oil
• 4 cloves garlic, minced
• 3-4 sprigs fresh rosemary, finely chopped
• 1 tsp paprika
• 1 tsp Red Barn’s 7 Steak Spice
• Salt and pepper, to taste
Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a mixing bowl, combine the softened butter, olive oil, minced garlic, chopped rosemary,
paprika, steak spice, salt, and pepper. Stir until the mixture is well combined.
3. Pat the chicken dry. Carefully loosen the skin from the chicken’s breast and thighs.
4. Generously rub the prepared herb-butter mixture all over the chicken including under the
skin and inside the cavity of the chicken.
5. Place the chicken breast side up in a roasting pan.
6. Roast the chicken for 50 to 60 minutes, or until the internal temperature reaches 165°F
when measured at the thickest part of the chicken.
7. Remove the chicken from the oven and let it rest before serving.
